Maple Hall is a residential hall at UNT that has a dining hall within it, named "Mean Greens Café" and commonly referred to as "Maple." This dining hall serves 100% vegan food, and quite frankly, its food feels the fanciest of all the main campus dining halls—not to mention its bougie, jazzy background music. Most importantly, it is home to Sam the Earl, the icon himself. Depending on your opinion of fancy vegetable dishes and vegan cheese, you could either love it (like the majority of TAMS kids) or hate it (no comment). Maple is well-known for its regionally-based themes: Tuesdays are for East Asian dishes, Wednesdays for South Asian, Thursdays for Italian, and Fridays for Mexican. (To be completely honest, I'm not entirely sure what Mondays are for. Perhaps just the classic American.)

This dining hall serves 100% vegan food, and quite frankly, its food feels the fanciest of all the main campus dining halls—not to mention its bougie, jazzy background music. Most importantly, it is home to Sam the Earl, the icon himself. Main Line

The main line is located directly to the right of the main entrance to the dining hall.

Customizable Dishes

Customizable dishes are by far one of the most appealing aspects of Mean Greens. Not only do you get to pick and choose the toppings and sauces for your dish, your food is literally made in front of your eyes by student workers—Hibachi chefs, if you will. This line also follows the "theme of the day," as listed below:

  • Tuesdays: Fried Rice (absolutely heavenly)
    • Toppings:
      • Spinach, baby corn, mushrooms, bamboo shoot, onions, tomatoes, vegan cheese
      • Anything from the Salad Bar (see: Other) that you put into a bowl and give to the chef
    • Sauces/spices:
      • Soy sauce, sesame oil, five spice, paprika, cayenne, lemon pepper, salt, pepper
  • Thursdays: Pasta
    • Toppings:
      • Spinach, baby corn, mushrooms, bamboo shoot, onions, tomatoes, vegan cheese
      • Again, anything from the Salad Bar (see: Other) that you put into a bowl and give to the chef
    • Sauces/spices:
      • Soy sauce, sesame oil, pesto, five spice, paprika, cayenne, lemon pepper, salt, pepper
  • Fridays: Tacos (no chef, just a bar where you can add toppings)
    • Toppings:
      • Tomatoes, onions
